
The Builder:
In the mid 1970s, my summers were spent apprenticing with journeyman carpenters who had learned their trade in the 30s and 40s. Their broad skills were brought to bear on everything from framing to finish work. Through out my years of work and study, design and building was a nearly everyday component of life. Set design and construction, architectural garden structures, and home renovations were as present as anything.
In the early 1990s I was enlisted to oversee the restoration of a New York, landmark institution called Chumley's. It was a speakeasy in the 1920's and had been unfortunately remodeled over the years. For about 18 months the restoration and renovation of Chumley's was ongoing. Window sashes were milled for replacement, tables and benches designed and built; copper and brass taps were refurbished and installed. Basement cooler space was excavated and bathroom and kitchen facilities were reworked, all with an eye toward authenticity of craftsmanship.
The Publican:
The role of the Publican is a crucial one to the success of any pub venture. One who takes this on must be equal to the task. Necessary attribute include: earnest cordiality, a sense of humor, even tempered strength and the ability to discern character. The greatest challenge lies in maintaining a comfortable environment for your guests. In a proper pub setting, visitors will feel inclined to leave their 'outside voice' outside. A quiet pint is what many pub goers seek. Others are interested to hear the music. In either case, it's a gift if you can provide this for them. It is always appropriate to encourage your patrons to 'speak easy'.
